Beta-Carotene Derivatives Can Block Effectiveness of Vitamin A, Study Suggests

Many known and still unknown compounds found in whole natural food are good for you when consumed as part of a balanced diet, but may be toxic when isolated into supplement form.

Researchers at Ohio State University recently announced that certain molecule derivatives of beta-carotene, the orange pigment found in vegetables such as carrots and sweet potatoes, can have an adverse effect on the body by blocking various actions of vitamin A. Beta-carotene is the primary dietary source of vitamin A, which is critical to human vision, bone and skin health, metabolism and immune function.
