Chef Joe Freemond recently joined the Cellar Wine Bar team in order to launch an expanded menu on top of CWB's small plates offerings. He brings years of culinary experience with an emphasis on Mediterranean and handmade pasta dishes with additional influences from Israel, Kenya and Tanzania during his travels.
His culinary philosophy is to create rustic elegant dishes with finesse and technique, using the absolute best ingredients. He is thrilled to have the opportunity to work with many of the local vendors that he has developed relationships with during his time cooking around Denver, CO while previously working for Il Mondo Vecchio. Chef Joe loves to create new dishes using his knowledge and history behind much of our favorite traditional foods, particularly handcrafted pasta, while sharing his enthusiasm for the culinary arts with those around him. ABOUT CHEF JOE FREEMOND:
Born in Southern California but raised in Denver, Chef Joe Freemond grew up with parents who would plan vacations around their dining destinations and who always exposed their son to as wide a range of cuisines as possible. Joe began his career at the age of fifteen as a dishwasher and sandwich cook at a bakery and panini shop in Cherry Creek. When Joe got to the University of Kansas for college his interest in cooking really flourished. He experienced some life-changing travel to Israel, Italy, Kenya, and Tanzania that really helped open up his culinary understanding. Time spent cooking in Rome with a celebrated chef who happened to be a long-time family friend is one of Joe's most instrumental periods in his career. During his time studying at KU, Joe started to gain some invaluable industry experience as a line cook at the historic Eldridge Hotel and as a meat cutter at the Community Mercantile in Lawrence, KS. Towards the end of his time at college, Joe was introduced to the founder of Il Mondo Vecchio Chef Mark DeNittis, and soon after Joe was helping out at IMV every time he was back home in Denver.
