Christian Ruffin's New Restaurant - Do [Dough] At The View - Offers Fresh Flavors Inspired By Italy

do [dough] is a one of a kind restaurant that has successfully married science with sustenance and sustainability by creating an experience that activates all of your senses.

From appetizers to desserts, do, set to open in April 2011, has created menu items crafted from high quality, fresh, simple ingredients, rooted in Italian culinary tradition. All of the cheeses used in the pies are gluten-free, made sans preservatives, fillers and artificial ingredients. do's homemade pizza sauce is light on the palette and made fresh daily with San Marzano D.O.P certified tomatoes imported from Italy. And, it doesn't stop there; do's premium pepperoni is lean and contains no fillers. Some say its "Old World" flavor is as authentic as Italians are as passionate! "Everyone knows me for my production work. I've been in the business for over a decade and have created amazing sound and light shows worldwide. What most people don't know is that it has always been my dream to open a restaurant. This restaurant is one of a kind, and what will set it apart from others is the infusion of technology, sound and lighting into the design. do will provide a true dining experience for guests, says restaurant owner, Christian Ruffin."

The musically inspired restaurant provides gluten-free menu options for those with wheat allergies. Dishes are broken down into scrumptious appetizers categorized as "Preludes," garden fresh salads defined as "Interludes," mouth-watering "Pizzas," and delectable desserts aptly called "Finales." The menu's signature provision is the "Maestro," the house specialty pizza prepared with a rich garlic cream sauce, fresh spinach, sumptuous wild caught shrimp and a special blend of cheeses, baked to perfection. One of the restaurant's standout "Preludes" is the Chipotle Shrimp & Avocado Flatbread w/Mango; a tasty, moderately spicy collaboration of mozzarella cheese and succulent wild-caught shrimp, baked on a crispy flatbread crust and topped with house-made avocado and cooling mango salsa. For the "Finale," the decadent "Black Velvet" cake, made with marbled chocolate and red velvet cakes and topped with signature cream cheese frosting is an excellent selection. do's extensive bar selection makes it easy for guests to find the perfect pairing for their meal. Signature cocktails include the "do'rita," an organic combination of top shelf tequila, fresh squeezed juices and nature's sweetener, Agave Nectar. This drink is undeniably second to none.
