“Some of the recipes in this book have played center stage at many functions, cultural events and special occasions that my family has celebrated,” says Nawabzadi Fatima Alam Khan, author of the 80-page cookbook.

Royal provenance

The princess is the older daughter of the Nawab and Begum of Belha and Surat.

Brought up in Surat and Mumbai (then Bombay) on the Western coast of India and now settled with her husband and two daughters in the Toronto suburb of Oakville, Fatima saw first-hand how her mother put together the best ingredients to dish up some of the tastiest meals expected of a royal household.

India’s royal kitchens boasted some of the best food, influenced by cuisines from different regions and dynastic traditions.

“My parents have always been appreciative of good food that fed both body and soul,” Fatima says. “The cuisine at home was Hyderabadi-influenced from my mother’s side and Surti and Mughlai from my father’s. Not surprisingly, those royal influences are reflected in many of the recipes listed in the book.”

Fatima has also included recipes that she has worked on as part of her lifelong love of cooking, first for her parents and siblings and now for her husband Buckey and daughters Zahara and Zoha – who all chip in to help in the kitchen.

Well organized

The cookbook is split into several sections: non-vegetarian starters, vegetarian starters, non-vegetarian main course dishes (chicken, lamb and seafood), vegetarian main course dishes, rice dishes (non-vegetarian and vegetarian), raitas (yogurts) and desserts.

A glossary of terms and a kitchen conversion table round up the collection.

A close-up photograph of the finished dish, along with easy-to-follow instructions, set the stage for each recipe. The ingredients are easy to find and the preparation not laborious.
