NH's Copper Door Appoints Executive Chef

Area native on board at anticipated Bedford, New Hampshire, restaurant

The Copper Door is pleased to appoint Zachary Martineau as its executive chef. A 2002 Manchester West High School graduate, he began his culinary career in high school and has found much success at several popular New England restaurants.

At the Copper Door, which is now under construction and slated to open at the end of the year, Martineau will have a pivotal role in organizing, creating and developing the chef-inspired menu. "Simple and fresh ingredients are a large part of my cooking style," Martineau said. "I truly believe that too many components clutter the simplicity of the overall dish."

He will also be responsible for creating all seasonal and specialty menus, using ingredients such as prime beef and local produce to create sophisticated restaurant dishes. "The farm-to-table movement, which is gaining momentum here in New England, is going to be a big focus at the Copper Door," Martineau said.

Martineau's professional experience includes contributing as sous chef at Hanover Street Chophouse in Manchester and the former C.R. Sparks in Bedford, as well as serving as executive banquet chef for the former Event Center at C.R. Sparks. He most recently served as an executive chef at an Italian restaurant in North Chelmsford, Mass., where he transformed the menu and staff, elevating both to a higher standard of dining experience.

Martineau's career began in high school, where he worked at a small catering company in Manchester and the former Baldwin's on Elm in downtown Manchester. He also had the privilege to help cook and serve a dinner at the prestigious James Beard House in Manhattan, N.Y.

He graduated from the New England Culinary Institute in Burlington, Vt., in 2004. He interned at Opus in Edgartown, Martha's Vineyard, and Wentworth by the Sea in New Castle.

The Copper Door will be located at 15 Leavey Drive in Bedford, directly across from the Bedford Safety Complex. It is part of the Great NH Restaurants group, which includes seven T-BONES and Cactus Jack's restaurants.
