Pasture Prime Family Farm's Berkshire Pork Wins Big at Tampa Bay's Top Chef Competition
Online, November 15, 2010 (Newswire.com) - Beating out renowned chefs from Timpano Chophouse, Ciro's Speakeasy and Supper Club, Chef Ferrell Alvarez from Cafe Dufrain, won the Tampa Bay Top Chef honors during the November 7th 2010 Cruising To A Cure event, which raised funds for the Children's Cancer Research Group at St. Joseph's Children's Hospital in Tampa, Florida.
Chef Alvarez won the competition with his Berkshire pork cooked three ways, which was raised locally at Pasture Prime Family Farm in Summerfield, Florida. Chef Alvarez has brought his sustainable and local food-movement philosophy to the menu and guiding principles of Cafe Dufrain, in Tampa. Seventy-five percent of the eclectic fare at the cafe is made primarily from sustainable or organic products. The restaurant is committed to promoting local farmers, in particular.

During the Top Chef competition, each contestant had fifteen minutes to prepare a meal featuring a prominent ingredient. Chef Alvarez cooked the Berkshire three ways. Berkshire pork is famous for its rich, complex flavor and darker meat characteristics. Its tender texture makes it a particular favorite among chefs.
