The menu for the evening is: Ricotta and Tomato Pasta; Rustic Salad; Blitzed Brownies. This pasta dish is a lighter, more elegant version of lasagna; all the flavors with a fraction of the time and effort. Serve the pasta in individual bowls with a dollop of the ricotta mixture. It is a pretty and rustic presentation which allows the diner to mix in a bit of the ricotta with each bite. The flourless brownies are ready in less than half an hour, and have endless possibilities.
Kicinski's food and recipes are not centered on gluten free only. She is a strong advocate of healthy eating and has developed many recipes that are free of refined sugars and other allergen preferences. She prefers natural sugars, sweeteners and nectars over white or refined sugar. This cooking class is another effort from Carol to raise awareness about celiac disease, gluten intolerance and how easy it is to live in this lifestyle.
